You need the Gierspenst coins to evolve Gierspenst into Monetigo. You need 999 of them.
How do I get the coin bag? You also get it by connecting Pokémon GO with Scarlet & Violet. You just need to send a postcard to Scarlet & Violet (more about this in the guide linked above for the golden stops).
The coin bag attracts Gierspenst for 30 minutes. When catching, you can also receive Gierspenst coins.
