Because when you go to sleep, you get a solid bonus of 10% on your collected XP. But if you sleep with someone, the bonus increases to a whopping 15%.

Starfield: Romances provide a hefty buff
How do you get the buff? It’s quite simple, you just need to find a usable bed and sleep for at least an hour. This secures you the “well rested” buff and gives 10% extra XP for 24 minutes.
If you have seduced one of your companions, you will get the buff just the same. But instead of 10%, the XP bonus goes up to 15%, also for 24 minutes. Lie down in bed while you are with the companion.
Additionally, the NPCs give you a cheeky line after the love act. One companion, for example, says that she likes to try “wild” things, but the jetpacks were a bit too much.

How to get companions into bed? Take the desired companions with you on your adventures, talk to them regularly, and pay attention to their preferences. If you behave in a way that increases the sympathy values between you, you will unlock special conversation options.
