Even though Sanji has not defeated a direct captain of a pirate crew, he has managed to defeat several strong officers and generals from enemy groups like Kaido’s pirate crew or the Baroque Works. In every one of his fights, he has earned his share alone, making him one of the strongest fighters of the Straw Hat crew.
With the money, Sanji would probably buy all sorts of ingredients and kitchen devices that make his everyday life in the kitchen easier. A thermomix indeed costs a lot of money!
Rank 2: Zorro

Like Sanji, Zorro only goes after the highest ranks of a pirate crew, but never with the captain himself. He was able to accumulate a significant sum both on Dressrosa and Wano Kuni. However, even before the great timeskip, he probably could have bought himself a nice new sword.
Because that is probably the only thing Zorro has in mind. Besides lounging around, sword fighting is his great passion. With the money, he could have bought himself decent whetstones and other accessories in addition to new swords.
